On Thanksgiving, I'm all about the side dishes. And, the next day, I love eating the cold leftovers from the refrigerator. Stuffing is my favorite! So, I invented... The Stuffing Pop!

My leftover stuffing
Crack an egg into the stuffing and combine to bind the stuffing. I used an egg from my chicken Coco! Then cook stuffing for 1 minute in microwave and then place in refrigerator for 30 minutes. Colder stuffing will roll easier into balls.

Place sticks into each ball
I love gravy on my stuffing, so I decided to roll and coat my stuffing balls in cold gravy
I opted to use diced dried cranberries and chopped pecans to roll my pops in. Chopped water chestnuts or homemade bacon bits would be delicious too.

Roll the pop in your condiments (here it's chopped nuts).
Put them on a plate and serve!
You get your Thanksgiving side dish flanked in one pop! If you don't like cold leftovers, you can heat your pops in the microwave for 20 to 30 seconds.
Turkey Tenders
For another quick leftover treat, take leftover turkey and tear it into strips. Dip in egg and then Panko breadcrumbs, then pan fry, deep fry, or bake. Use leftover cranberry sauce as a dipping sauce.

omg how creative! I love the stuffing pops! totally my fav part of my mom's dinner! we haven't had it recently though. My husband and I just had random stuff since we weren't meeting up with any other family. stupid economy.

I can't take credit for my leftover recipe because it comes from Rachel Ray but I look forward to the day after thanksgiving just because of this left over idea. It's the Day After Thanksgiving Dip. In a small pyrex dish lay down some stuffing, then cranberry sauce, then turkey, gravy and top with mashed potatoes. Pour 3 Tbs of melted butter over the top of the mashed potatoes and bake on 350 until the potatoes become golden brown. Take your left over bread and drip in. It's like an open faced left over sandwich. This is perfect for when you arrive home from shopping. I actually prep mine when cleaning up from Thanksgiving dinner so it is set to go right into the oven on Friday. Enjoy!
