Hi everyone! It’s Kate Van Horn from She Be Kale’in It, back with another health-inspired blog post for all of you. Margaritas, sangria, and spiked punch scream summertime! Everyone is entertaining, especially in July, and if you’re the host, chef and bartender, the summer festivities can get overwhelming. Wow your guests with deliciously flavorful and surprisingly light cocktails! The trick to making cocktails a little bit healthier is using healthy sweeteners such as coconut sugar and stevia, as well as fresh fruit and herbs with natural flavors rather than artificial syrups and additives. Enjoy the tropical margarita, sweet sangria and tangy grapefruit punch recipes below!
Coconut Lime Frozen Margarita
I used a combo of coconut water and lite coconut milk rather than coconut cream. Sweeten with natural sweeteners like liquid stevia or agave, and enjoy the refreshing tropical flavor of this margarita.
Makes 1: But easily multiply ingredients and blend in large high speed blender for multiple margaritas!
- Juice of ½ lime
- 3 oz. coconut milk, lite
- 8 oz. coconut water
- 3 oz. tequila blanco
- 1 oz. triple sec
- Handful of ice
Add all ingredients and blend! Serve with lime wedge and rim the glass with coconut!
Sweet Tea Sangria with Peach & Mint
Makes 1 large pitcher:
- 10-12 mint leaves, fresh
- 3 fresh peaches
- 1 cup raspberries
- 6 cups green tea (3 tea bags)
- ½-1 cup of coconut sugar (depending on how sweet you prefer)
- 1 bottle of white wine.
First, bring water a boil and remove from heat. Add coconut sugar and whisk.
Add tea and steep 3 tea bags for about 10 minutes. Remove tea bags and allow tea to cool to room temperature.
Next, add white wine and tea to a pitcher, followed by the cut fruit and mint.
Allow to chill for at least 3 hours, preferably 8+ hours.
Serve over mint infused ice cubes!
Grapefruit Basil Punch
Another batch cocktail recipe perfect for entertaining, prep the night before, and add ice and club soda just before guest arrive! The basil simple syrup utilizes fresh summer herbs and the tangy lime and grapefruit are delicious and not overly sweet!
Makes 1 large pitcher:
- 1 cup fresh basil leaves
- 1 cup of sugar
- 1 bottle gin
- 6 cups of grapefruit juice (fresh is best, but find not from concentrate!)
- 1 cup fresh lime juice
- 1 liter club soda
- Additional basil, grapefruit slices and lime to garnish.
First, prepare the simple syrup. Stir 1 cup of water and 1 cup sugar in a medium pot over medium-high heat. Allow sugar water to come to a simmer. Remove from heat, and add the 1 cup fresh basil leaves. Steep for 30 minutes and then strain simple syrup. Move to fridge to chill for about an hour.
Next, mix the syrup, bottle of gin, lime and grapefruit juices with 2 cups of cold water and chill for 1-2 hours before serving. Just before serving, add the club soda and any garnishes to punch!
