Melon Cake

When I think of cake, I immediately think about getting in the kitchen and baking with my babes.  However, this amazing (and healthy) looking melon cake from April Luca is a whole new take on the traditional cake. It’s nutritious, which is super important, and is super easy to make. I also love a recipe that calls for all seasonal ingredients, and there’s no better time than summer to enjoy the amazing melons that are in season.

Here’s what you need to make this refreshing & tasty melon cake:

Melon Cake

  • 1 Whole Watermelon
  • 1 Whole Cantaloupe
  • 1 Whole Honey Dew Melon
  • 10 Strawberries
  • Handful of Blueberries
  • Grapes to Garnish

Melon Cake Take each melon and cut into round slices

Melon Cake Start to stack your melon slices, alternating with different types of melon, and fill the middle in with strawberries

Melon Cake Top off the cake with a full piece of watermelon

You can serve this healthy, no-bake cake on a cakeplate or just a pretty plate. And if you want to make it a little sweeter, add some whipped cream on top. Yum!

    Just stumbled upon this. Looks tasty! A good way to get myself eating some more fruit.
    As for a recipe… we just discovered banoffee pie! Not much refreshing, nor “summer”, but so easy and an instant hit with guests. :-)

    One of my favorite summer recipes is tomato – watermelon salad. A favorite of family and friends when we head to MV for down time. Cut up 2C watermelon into chunks, add 4 tomatoes, chunked (large) or two pints of yellow cherry tomatoes, halved (or some of each). Slice very thin red onion slices, about 1/3C. Chop 1C fresh herbs, I use basil, mint and parsley. Add the herbs to a bowl with 1/4c evoo and 2 Tblsp lemon juice, add freshly ground pepper and sea salt to taste. Toss in the tomatoes, watermelon chunks and red onion, stir gently to coat the fruit. Sprinkle the top with 1/2c feta cheese. Chill and serve. We love this!
