Foodista: Peanut Butter Chocolate Chip Granola

Hi guys! Casi from cupcakeMAG here, and today I’m sharing one of my absolute favorite springtime recipes to make with my kids – Peanut Butter Oatmeal with Chocolate Chips. It’s healthy, tasty and easy enough for my littlest ones to help make! It’s also a great snack and is perfect for an on-the-go pick me up.

Here’s what you need to make it:

Peanut Butter Chocolate Chip Granola

  • 4 1/2 cups oats
  • 1/4 cup brown sugar
  • pinch of salt
  • 1/4 cup pure maple syrup
  • 1/4 cup + 1 tablespoon creamy peanut butter
  • 1/2 cup coconut oil, melted 
  • 2 teaspoons water
  • 2 teaspoons vanilla
  • 1 cup almonds, toasted and chopped
  • 1/3 cup dark chocolate chips
  • dark chocolate, grated, to taste

And here’s how you make it:

Prep. Preheat the oven to 350 degrees. Line a half sheet pan with parchment paper.

Combine. In a large bowl, mix together the oats, brown sugar, and salt. In another bowl, whisk together the maple syrup, peanut butter, coconut oil, water, and vanilla until smooth. Add the wet ingredients to the oat mixture and mix well, making sure the oats are fully coated.

Bake. Spread the oats in an even layer on the half sheet pan, and bake until oats are golden brown and no longer wet, stirring often, 20-30 minutes.

Complete. Let cool to room temperature, stirring the cooling oats on pan once. Add the toasted almonds and chocolate chips to the cool granola. Serve with yogurt or milk, and grate chocolate to taste over the top.

    Tori, as always, you are super-interesting. Just to let you know — if you want to post the same picture twice, it would be good to have a different camera angle on the second shot, just to make it worth while for the viewer to look at both pictures. Anyway, just a suggestion. Your stuff is really good.

    Always looking for these kinds of recipes. Couple ideas, you could also use organic sunflower seed butter if you don’t like peanut butter, coconut flakes and there’s some high quality chemical free protein powders that can be added (with extra butters) to turn this into a protein bar. :)
